C'est de maniere traditionnelle et muni de son las ( outil traditionnel et ancestral ) que Mickael récolte le sel.
C'est dans les cristalisoires que nait le sel. Arrivé par l'ocean, l'eau est finement repandue dans ces carrés argileux. Grâce à un savoir-faire ancestral de retrait d'eau, le paludier fait apparaitre et récolte les cristaux de sel.
Cette technique est biologique, aucun traitement n'est fait. Parfois un tri manuel se fait afin de retirer quelques résidus d' argiles.
A l'heure où l'Europe vote une loi permissive sur l'obtention du label bio, les producteurs français continue cette récolte à la main.

Mickael harvests the salt in the traditional way, using his las (a traditional, ancestral tool).
It's in the cristalisoires that the salt is born. Arriving from the ocean, the water is finely spread in a very fine layer in these clay squares. Thanks to an ancestral water-removal technique, the salt worker creates and harvests the salt crystals.
This technique is biological, and no treatment is carried out. Only manual sorting is carried out to remove a few clay residues.
At a time when Europe is passing a permissive law on obtaining the organic label, French producers are continuing to harvest by hand.
