Fabrication de l'huile de noix du Périgord
La noix était déjà consommée dans le Périgord depuis 17000 ans. La fabrication de l'huile de noix du Périgord remonterait au 13ème siècle. À Ligneyrac, aux confins du Périgord, Abonnel et Anne Jaubertie ont choisi ce fruit pour créer leur petite entreprise artisanale d'huile de noix, Le Moulin de la Vie Contée. Chaque week-end, de septembre à décembre, ils broient les cerneaux de noix dans une ancienne meule en granit du Berry afin d'en extraire la substantifique matière aux reflets d'or. La pâte de noix est ensuite chauffée dans un chaudron en fonte jusqu'à atteindre un certain degré de torréfaction. Puis, à la manière de l'huile d'olive, une presse en fonte vient extraire l'huile de cette pâte. Le couple ne cultive et n'utilise que deux variétés de noix AOP (Franquette, Marbot) sur quatre AOP que compte le terroir (Grandjean, Corne, Franquette, Marbot). Depuis quelques années, ils expérimentent la Fernor, qui n'a pour l'instant pas d'AOP. Ce moulin a l'ancienne produit quelques 1500 litres d'huile de noix monovariétale par an.
Production of walnut oil from Périgord
Walnuts have been consumed in the Périgord region for 17000 years. The production of walnut oil dates back to the 13th century. In Ligneyrac, on the edge of the Périgord, Abonnel and Anne Jaubertie chose this fruit to create their small artisanal walnut oil company, Le Moulin de la Vie Contée. Every weekend, from September to December, they grind the walnut kernels in an old granite millstone from the Berry region to extract the substance with its golden glints. The nut paste is then heated in a cast iron cauldron until it reaches a certain degree of roasting. Then, like olive oil, a cast iron press extracts the oil from the paste. The couple grows and uses only two varieties of PDO walnuts (Franquette, Marbot) out of the four PDO walnuts in the area (Grandjean, Corne, Franquette, Marbot). For a few years, they have been experimenting with Fernor, which does not have a PDO for the moment. This old-fashioned mill produces some 1500 liters of monovarietal walnut oil per year.
