Au Moulin de Sabathier, la farine est revenue
Héritiers obstinés et néoruraux en quête de sens sortent de leur torpeur ces édifices animés par l’eau ou le vent. Farine, tourisme, hydroélectricité : restaurés, ils redeviennent des lieux de production et donnent des ailes aux projets d’autonomie.
Du moulin endormi de son enfance Sandra Lanne-Touyagué garde le doux souvenir d’un « débarras, un peu cuisine aussi », où ses grands-parents « plumaient les oies en racontant des histoires de meuniers et de farine ». Après cinquante-quatre années d’arrêt, le moulin à eau de Sabathier, à Conchez-de-Béarn (Pyrénées-Atlantiques), s’est réveillé à l’été 2024.

At the Moulin de Sabathier, flour has returned
Stubborn heirs and neo-ruralists in search of meaning are breathing new life into these buildings powered by water or wind. Flour, tourism, hydroelectricity: once restored, they become places of production once more and give wings to projects of self-sufficiency.
Sandra Lanne-Touyagué has fond memories of the dormant mill from her childhood—a “storage room, and a bit of a kitchen too”—where her grandparents “plucked geese while telling stories of millers and flour.” After fifty-four years of inactivity, the Sabathier watermill in Conchez-de-Béarn (Pyrénées-Atlantiques) came back to life in the summer of 2024.
