Ils vont trier par taille et par poids les huîtres pour les remettre à la mer le lendemain. Il faut en général 3 à 4 ans pour qu'une huître soit de bonne taille pour être vendable. Destinés aux consommateurs français et étranger, le savoir-faire mêlé aux avancées techniques industrielles, permettent un travail rapide et précis.

At the family business "les Vergers de Normandie", in Saint-Vaast-la-Hougue, Cyril, Max, Martin, Yohann and Gui are doing what's known as the sifting. They sort the oysters by size and weight, and return them to the sea the next day. It generally takes 3 to 4 years for an oyster to reach a saleable size.
