Le reblochon, en AOP depuis 1958, est l'un des premiers fromages français à avoir reçu le label, et sa production se situe en deuxième place après le comté. Pour réaliser ce fromage au lait cru de vache, le lait doit exclusivement provenir de trois races nourries principalement de pâturages d'alpage l'été, et de foin l'hiver. Les élues à cornes sont la farine, la montbéliarde et l'abondance.
La Haute-Savoie, compte 500 exploitations laitières, 18 fromagers, 120 exploitations fermières, 11 affineurs et l'AOP reblochon représente 45 000 vaches. La production annuelle de reblochon est 16 600 tonnes dont 17 % sont fermiers. Pour faire un reblochon, il faut 4,2 litres de lait ! Et son poids doit être compris entre 450 et 550 grammes.
