Le temps des marées
Philippe Bos, Ostréiculteur depuis quatre générations sur le Bassin d’Arcachon, travaille sur ses parcs a huitres au rythme des marées. Après, prés de quarante ans de métier, il témoigne des difficultés croissantes de l’ostréiculture : pollution des eaux, interdictions sanitaires et manque de main-d’œuvre, notamment a l’approche des fêtes de fin d’année, période clé pour la filière. Ses enfants n’ayant pas souhaite reprendre l’activité, les parcs du Banc d’Arguin et du Courbey sont désormais exploites par Fréderic Simon et son fils Luca.
Tidal times
Philippe Bos, an oyster farmer for four generations in the Arcachon Basin, works on his oyster beds in tune with the tides. After nearly forty years in the business, he speaks of the growing difficulties facing oyster farming: water pollution, health bans, and labor shortages, particularly as the holiday season approaches, a key period for the industry. As his children did not wish to take over the business, the Banc d'Arguin and Courbey farms are now run by Fréderic Simon and his son Luca.
