La Ferme (de) Rosalie
Installée depuis 2017, issue d’une lignée de bouchers en Alsace, elle développe une agriculture en circuit court et élève une quinzaine de veaux de race Vosgienne par an, patrimoine génétique qu’elle s’attache à préserver. Refusant d’intégrer les regroupements locaux de la filière viande, elle doit aujourd’hui faire face à la fermeture de l’abattoir le plus proche : ses animaux sont transportés jusqu’à Aurillac, dans le Cantal, puis les carcasses sont découpées à Sarlat, en Dordogne, avant de revenir à la ferme. Un trajet total d’environ 300 km, contre 60 km auparavant, qui illustre les difficultés croissantes rencontrées par une productrice locale indépendante face à la concentration de la filière viande, à l’accès restreint aux marchés et aux enjeux de bien-être animal.
Rosalie's Farm
Established in 2017, she comes from a long line of butchers in Alsace and has developed a short supply chain for her farming business, raising around fifteen Vosgienne calves per year, a genetic heritage she is committed to preserving. Refusing to join local meat industry groups, she now has to deal with the closure of the nearest slaughterhouse: her animals are transported to Aurillac, in the Cantal department, then the carcasses are cut up in Sarlat, in the Dordogne department, before returning to the farm. This is a total journey of around 300 km, compared to 60 km previously, illustrating the growing difficulties faced by an independent local producer in the face of concentration in the meat industry, restricted access to markets, and animal welfare issues.
