Des huitres pleine mer bio
Démarrée avec deux personnes il y a 8 ans, l'entreprise emploie aujourd'hui 5 personnes. Cette évolution est le témoignage d'une envie de prendre soin du produit, mais également de la mer qui fournit cette nourriture et de l'héritage laissé aux futures générations. Les huîtres naissent en charente et sont amenées à la fin de la première année dans la région. Elles y grandiront pendant 3 ans au rythme des marées, comme d'autres exploitants ici. Elles seront sorties de la mer pour êtres calibrées et réparties selon les tailles pour ensuite maturer un mois à nouveau dans l'eau de mer avant d'etre sortie, contenues 24 heures en bassin et expédiées pour la consommation.
La démarche de l'élevage bio peut se voir au niveau de la densité des huîtres réparties dans les poches, ainsi que dans le traitement annexe de la production, dans le choix de produit d'entretien plus respectueux de l'ecostystème : avant toute chose, la démarche de Baptiste et Mélanie de se lancer sur un label bio repose sur le coté naturel de la production et la préservation de l'environnement.
Organic Oysters
Launched 8 years ago, with two workers, the company now counts 5 employees. The evolution toward organic production is the expression of a care for both the product and the sea that provides food and is a major element of life in the region, and an heritage for coming generations. Oysters are born in Charente, a region on the atlantic coast in France, and are brought after one year of life in Normandy. There, they will grow up for 3 years, in open sea, following the rythm of the tides, as it is the tradition in this city. They will be taken out of the sea for a sorting in size and weight, and then follow a one month maturation, before being taken out, held 24 hours in a pound and shipped for consumption.
The difference in the process of bio production is hardly noticable for the unused eye, it consists mostly in a lower density of oysters in the bags where they are grown and a followed care in choosing maintenance products that causes less damages to the environment.
