Atelier spécial à l'école Ferrières
La Semaine Nationale du Syndrome de l'Intestin Irritable (SII), organisée par l'APSSII, association représentant les patients atteints de ce syndrome, a débuté le 4 avril 2023. Des ateliers cuisine, des conférences dans les hôpitaux et des points information ont été mis en place à travers toute la France afin de sensibiliser les gens à cette maladie trop souvent méconnue. C'est dans ce cadre que Céline Bernard, diététicienne-nutritionniste bénévole de l'association et Romain Gourmoud, Chef gastronomique formateur, ont organisé un atelier spécial à l'école Ferrières (77). Les étudiants en formation Cuisine d'Excellence ont pu apprendre à cuisiner des plats pauvres en Fodmaps, des aliments riches en sucres fermentescibles susceptibles d'aggraver les symptômes du SII. Special workshop at Ferrières School
The National Week of Irritable Bowel Syndrome (IBS), organized by APSSII, an association representing patients with this syndrome, began on April 4, 2023. Cooking workshops, conferences in hospitals and information points have been set up throughout France to raise awareness of this disease too often ignored. It is within this framework that Céline Bernard, dietician-nutritionist volunteer of the association and Romain Gourmoud, gastronomic chef trainer, organized a special workshop at the Ferrières school (77). Students in the Cuisine d'Excellence program were able to learn how to cook dishes low in Fodmaps, foods rich in fermentable sugars that can aggravate IBS symptoms.
