FOOD IMPACT - LE RESTAURANT GASTRONOMIQUE "LE REPUBLIQUE" SOLIDAIRE ET DURABLE
En France, le restaurant solidaire est un concept connu, mais aucun n?avait encore pensé à mixer les publics autour de la cuisine gastronomique, dans une même salle.
À Marseille, le chef étoilé Sébastien Richard a fondé en 2022, le restaurant "Le République" pour redonner goût à la vie, respectabilité, confiance à celles et ceux que la vie a bousculés. Invités par une association partenaire, ils découvrent la cuisine bistronomique en famille ou entre ami.es dans un décor majestueux de style Renaissance, près du Vieux Port. Le restaurant accueille en effet, sans distinction, ces personnes au parcours précaire et la clientèle traditionnelle. A la caisse, les uns paient un euro ; les autres paient le prix affiché sur le menu.
Cet engagement - bénévole - sans faille est partagé avec 3 co-fondateurs qui, rassemblés au sein de l'association La Petite Lili, multiplient les projets pour faire bouger les lignes de la restauration.
Au-delà de l'action solidaire, le projet a un (très) fort impact social et environnemental (statut d?entreprise d?insertion et label éco-table). Une démarche éco-responsable alimente une chaine de valeurs vertueuse localement. L'insertion et la formation font partie de l'ADN depuis les premiers instants. Sylvain Martin, co-fondateur, en charge des partenariats, soutient les projets inclusifs qui renforcent le sens éthique de leurs actions.
La question des valeurs est d?ailleurs au c?ur du modèle économique. La cuisine est considérée comme un patrimoine qu'il faut entretenir. Le République, porté par l?association La petite Lili, prouve que son modèle solidaire et innovant fonctionne. 10 % de l?addition est utilisé au financement des repas des bénéficiaires. "Nous avons eu de l?aide pour l?investissement mais sur le fonctionnement nous sommes autonomes". Véritable hommage à Liliane, la maman de Sébastien Richard, récemment disparue, très investie auprès des démunis, ce restaurant d?un nouveau genre défend une démarche très engagée qui mêle solidarité, générosité, talent, créativité et goût du partage.
À Marseille, ville de mixité, le vivre ensemble prend alors tout son sens.

In France, the concept of the "restaurant solidaire" is well known, but no one had yet thought of mixing different publics around gastronomic cuisine.
In Marseille, Michelin-starred chef Sébastien Richard founded "Le République" restaurant in 2022 to restore a taste for life, respectability and confidence to those who have been shaken up by life. Invited by a partner association, they discover bistronomic cuisine with their family or friends in a majestic Renaissance-style setting near the Old Port. The restaurant welcomes people from disadvantaged backgrounds and traditional customers alike. At the till, some pay one euro; others pay the price shown on the menu.
This unwavering commitment - on a voluntary basis - is shared by 3 co-founders who, working together under the umbrella of the La Petite Lili association, are multiplying their projects to change the face of the restaurant industry.
As well as being a community initiative, the project has a (very) strong social and environmental impact. Integration and training have been part of the DNA from the outset. Not just in the kitchen and dining room (where 30 people are on subsidised employment schemes). Co-founder Sylvain Martin, who is in charge of partnerships, has opened the restaurant to the likes of "Des étoiles et des femmes", "Dans le noir" and the AMCP (12 schoolchildren who will be entering a hotel management school). These are all inclusive projects that reinforce the ethical nature of their actions.
The team is also actively involved in an eco-responsible approach that feeds a virtuous chain of values locally: short-distance sourcing, organic products, zero waste and anti-waste policy, bike deliveries, recycling, etc.
The question of values is at the heart of the business model. Cuisine is seen as a heritage that needs to be maintained. The Republic, run by the association La petite Lili, is proving that its innovative model of solidarity works. A genuine tribute to Liliane, Sébastien Richard's mother, who recently passed away and who has always been deeply committed to helping the underprivileged, this new-style restaurant has a very coherent overall approach that combines solidarity, generosity, talent, creativity and a taste for sharing. In Marseilles, a city of diversity, living together takes on its full meaning.
